saw two people tonight i haven't seen in awhile
ich kann dir sagen nicht, was ich sagen will
manchmal denke ich dass, das mir leid tut
aber.. vielleicht besser ist, wann man nicht alles wissen

I'm wondering how they explain -heit and -keit to you? Suffixes to create abstract nouns? I'm not sure though, my definition (um... ) might be wrong or totally incomplete.

I've always understood it to be like English's "-ness".
Though now that you mention it, I don't know the difference between "-heit" and "-keit", though it feels a bit phonetic.

I think you're right about that phonetic part. Whatever sounds better/is easier to pronounce is chosen. I'm not sure if there is a rule behind it, maybe it's just arbitrary.
